spring dinners

It's not quite hot outside yet, but the buds have bloomed and the nights seems longer already. I'm looking for quick, springtime dinners that are filling but light enough to whip together while the kiddos are outside jumping rope. Have any favorites?

This is exactly why I love summertime, spring time, warm weather. I eat so much healthier....

Zucchini ribbons lightly blanched. Make a sauce with brown cow plain yogurt, a bit of sour cream, fresh basil, salt and pepper. Mix zucchini, sauce and frozen peas with pasta. Serve warm. I like to add Parmesan cheese and grilled chicken to the top.
