grilled panini {dinner time}


Last night we made these grilled Italian delights, a different version for each of us:
for Dave: grilled chicken, baby spinach, pepper jack & roasted peppers {yum}.
for moi: heairloom tomatoes, fresh mozerella, basil, baby spinach = {double yum}.
for Ruby: straight up grilled cheese.
I'm kind of in love with our George Foreman Grill now, I've been concocting new panini ideas all morning! Anyone have any good ones?

we use our Georgie all the time too! I just realized about a month ago that we could make paninis with it! It was a good day =)

Still looking for the best bread to make them with, though

I love grilled (balsamic-y) veggies and a smoky cheese. I've been eying panini presses and hadn't considered using our GF. yum!

We have a Cuisinart griddler. It rules. But honestly, I don't know if it's any better than a George Foreman. I like carmelized onions and fig jam on all my paninis. Havarti is a great melting cheese, same with muenster. The cheese holds it all together. Everything else depends on what's in the fridge or the craving or the season!

I love breakfast paninis. Scrambled eggs, bacon or sausage and cheese!
